TOMATO TART WITH MUSTARD CRÉME

A french inspired tomato tart that is savoury, crunchy and juicy at the same time. It's easy to make, and taste really good - close your eyes, and image that you are in a french bistro. A perfect lunch, a side dish or something you can make in a hurry when you want something tasty.
Ingredients
4 puff pastry sheets
2 tablespoons crème fraîche
1 tablespoon Dijon mustard
About 1 tablespoon chopped fresh thyme chives, plus some thyme leaves for serving
A pinch of salt
Freshly ground black pepper
A mix of tomatoes, thinly sliced
Directions
1. Preheat oven to 220°C. Put a baking sheet on a baking tray, and put the frozen puff pastry on the baking tray. Let the pastry defrost for a minute or two, and carefully roll the edges in, so it makes a little edge. Prick all over the pastry with a fork.
2. Mix crème fraîche, mustard, chopped thyme and chives, a pinch of salt, and freshly grinded pepper in a small bowl. Spread the mixture evenly over the pastry, top with tomatoes, and season with some more salt and several grinds of pepper.
3. Bake until the pastry is golden brown and tomatoes looks a bit dry. Serve topped with thyme leaves and flaky salt.
